Delegate the outcome. NOT the task. When you're handing something off, try framing it as an outcome instead of a task. Instead of: "handle my inbox while I'm out", try: "while I'm traveling, nothing urgent should fall through the cracks, these three people (X, X, and X) should feel attended to, and I should come back to something I can tackle in under an hour". The second version gives your assistant room to make judgment calls. But that only works if they have the context to make good ones.
