Last year, I temporarily took over a kindergarten kitchen to explore and rethink Kita-Food. Along the way, I added some specialised equipment to make the process more interesting, and I’ve now started recreating and shooting some of the recipes to share these insights and provide feedback to the brands I’ve been collaborating with. While recreating the dishes, it struck me: how incredibly flavourful a simple dish can be when you rely on great organic ingredients and the right techniques. Take "Hutspot". Probably one of the simplest dishes ever—a Dutch classic dating back to the 16th century. Legend has it the Spanish left it behind on the battlefield. They definitely didn’t have fancy equipment… to say the least. Using the Pacojet gave me a little help. The natural carrot flavour really shines; combine that with sautéed onion for umami and mashed potato for body, and suddenly this humble dish—served with lentil balls—becomes a real winner. What I love about this approach: ·      Still incredibly easy to prepare (also for 30 kids) ·      Pure, natural flavours to discover ·      The smoothest, silkiest texture ·      No need to peel the carrots - let the Pacojet pulverize everything, making all the goodness fully accessible Reinventing simple food for kids is more fun (and delicious) than I imagined.
