Specifically, we look at fibers that can enhance microbial diversity and stimulate beneficial bacteria in the digestive system. We are creating a database of over 2,000 lab-based fermentation studies that show how different fibers affect gut microbiota composition and functionality. They also reveal the biochemical reactions through which gut bacteria metabolise fibers, providing insight into links with fermentation, disease prevention, and overall gut health. ๐ฃ๐ฟ๐ฒ๐ฑ๐ถ๐ฐ๐๐ถ๐ผ๐ป๐ ๐ณ๐ผ๐ฟ ๐๐ฎ๐ฟ๐ด๐ฒ๐๐ฒ๐ฑ ๐ต๐ฒ๐ฎ๐น๐๐ต ๐ผ๐๐๐ฐ๐ผ๐บ๐ฒ๐ A key innovation within FIBERME is its AI-driven prediction model. Combining data from human studies and fermentation analyses, the model forecasts how different dietary fibers affect the gut microbiome. This enables the food industry to design personalised, fiber-rich products that promote specific health outcomes. The project also identifies fiber blends that may enhance short-chain fatty acid production, reduce inflammation, or strengthen gut barrier integrity. This supports the development of next-generation fiber formulations. A human study will help validate laboratory findings and further refine the AI model. ๐ค FIBERME brings together partners including: Unilever, Cargill, dsm-firmenich - Health, Nutrition & Care, Shijiazhuang Junlebao Dairy Co., Ltd., Dossche Mills NV, Ingredion Incorporated, Mars, Sigma Alimentos and WUR. Project results are expected in April 2028.
