π₯βοΈ How do food texture and eating rate of ultra-processed foods (UPF) influence energy intake? Well, if you are looking to loose weight: chew on it! Participants in this study by Marlou Lasschuijt (Wageningen Human Nutrition and Health) and colleagues* followed two separate diets for two weeks. Both groups ate 95% ultra-processed foods. However, one group ate foods with textures that require chewing, which made then eat more slowly. The other group ate foods with softer textures, which you can eat much more quickly. π₯π²πππΉππ: When participants ate slow due to the texture of their diet, they consumed on average 369 kcal less per day! These findings highlight that we have to look beyond simply classifying foods based on their level of processing to determine if a food fits within a healthy diet.
