At Contini Restaurants, we believe that what we eat should reflect our care and respect for the planet. Farmed salmon comes from an intensive process that harms wild Atlantic salmon and damages the marine environment that smaller, more sustainable fisheries depend on. By supporting Off The Table, we’re driving this unsustainable product off menus, shelves, and supply chains, moving us towards a better food system for everyone. We hope small choices like these can make a little difference. We support the Off The Table campaign which is designed to protect wild salmon stocks. It’s been a difficult journey as so many visitors come to Scotland to enjoy traditional smoked salmon. Salmon is now on the trendy superfood list of healthy must eat ingredients. Fascinating how conflicting values sit alongside each other. Certified wild salmon, in season, costs an incredible £75 per kilo. Proof, if you needed, how much some good but also difficult choices cost. We regularly have mackerel on our menus and the smoked variety celebrates the traditional artisan skills of preserving fish. Thanks to Wendy Barrie at Slow Food and Eilidh at CPM we’ve traced an alternative to mackerel that’s more like salmon. We’re now able to share a hot smoked fresh water rainbow trout on our menus. Ticking the healthy, ethical and sustainable box. This variety does not impact the wild breeding stocks. It’s more delicate than some other smoked fish and worth trying. Watch out for the bones however, as these are small fish so have smaller bones. Fish from the north of England that comes to us via a Musselburgh Fishmonger. Delicious.
