Contini Training Academy 🧀 As part of our ongoing commitment to learning and development, the latest session at the Contini George Street welcomed Rory Mellis , Director of I.J. Mellis Cheesemongers, for an engaging, hands-on workshop focused on the legendary Parmigiano Reggiano DOP. Rory brought along a 24-month matured wheel and demonstrated the traditional way of opening it. The team then had the chance to try it themselves, which quickly became the highlight of the session 😊 . Rory also gave the team insight into what makes Parmigiano Reggiano so special, from its protected origin status and strict production standards to how ageing develops its flavour and texture. He also explained how to read the markings on the rind to understand its age, and shared simple pairing ideas to enjoy it at its best.
