Quality Services International GmbH - a Tentamus company - has launched a new method called HILIC Honey Sugar Profiling. This approach detects honey adulteration by analyzing its unique sugar fingerprint instead of searching for specific marker compounds. 🍯 Some fraudsters now use highly purified beet and rice syrups that are made to trick standard tests. These syrups have the usual markers removed, making them harder to detect with traditional methods. Rather than looking for certain markers, this new method examines the entire sugar profile of honey. It uses machine learning to compare each sample to a large database and find small differences. In high-risk cases where syrup markers are missing, it works better than methods like Bruker NMR and HRMS.
