AJ Castillo didn't name his restaurant Americanos by accident. His grandfather came from Mexico — a mariachi singer who worked factories and started a family. His father Al grew up between two worlds, joined the Marine Corps, became a Chicago police officer. AJ grew up the same way: Mexican roots, American life, always a little between. So when it came time to name his restaurant, Americanos just fit. Now AJ is a first-time father. And when he talks about what he wants for his daughter, he doesn't lead with ambition or achievement. He wants her to be proud of her work. Confident. And free to grow on her own terms — whether that's through the restaurant or something else entirely. "She can start here and learn from the ground up. We'll give her everything she needs." Restaurants have a way of doing that. Teaching people how to work, how to show up, how to be part of something. AJ learned it. His daughter will too.
