S E Ñ A ~ The last decade of the past millennium set the table for Chile’s famed powerhouse of big Bordeaux styled blends. Ohh yeah! the 90’s brought moments like the re-discovery of Carménère, the consolidation of Don Melchor and foundation of four more wineries considered today as the “Crus of Chile”; one of the big five and probably the first major ICON label is SEÑA (distinctive sign). The multiple one hundred pointer SEÑA is product of a collaboration between Napa valley legend Robert Mondavi and Chilean wine visionary Eduardo Chadwick. It has given the Austral nation many satisfactions by placing above world’s highest ranked blends on blind tastings in numerous occasions. @senawinery is located on a privileged orientation in the magnificent soils of Aconcagua Valley, home to bold yet elegantly balanced velvety wines. Last tuesday @lesdixvins and renowned winemaker @franciscobaettig executed beautifully this vertical tasting with food pairing from the 2011, 2013, 2017 and 2019 (twenty fifth anniversary label) vintages. Wonderful experience and sensorial exercise of two cooler vintages to warmer ones, older to younger, salty to sweet. 🍷 Can I hear a chinchín as #SEÑA for Salut…?! PS. The two items on the menu card that aren’t pictured where far from the greatness of the ones that did see the light of my flash. #theDeliriousFoodie #MiguelPontrelli
