Our butcher shop in Castleisland has been rented out for the last 26 years and recently our tenant Diarmuid was doing some internal work with new signs, and said he’d like something to commemorate my grandfather Jack, and this was the idea I had brought to life by Walsh Colour Print. On the left he’s on his tractor in the 1950s and on the right he’s on the Boherash farm in Buttevant, Co Cork in the 1980s after the arrival of new gilts from JSR Group in the UK as we were a nucleus sire unit for them at the time. The quote in the middle is a verse from a poem that was written about him by Cáit Curtin and says; “This noble giant of enterprise, sadly he’s passed away He’s left a splendid legacy that’s with us every day It’s about the gift of faith and love, courage and hard work Jack! You were an inspiration, God rest your gentle soul.”
