(english below) Se lancer dans le vin sans alcool quand on est issu d’une famille de distillateurs de cognac, c'est une évidence.. disons qu'il n'y a qu'un pas… assez grand peut-être ? Pas tant que ça... En grandissant au milieu des vignes, on garde des attaches fortes pour un savoir-faire peaufiné pendant des siècles. Et pour faire un bon vin sans alcool, il y a besoin de tout ce savoir-faire pour créer quelque chose de nouveau, une 'nouvelle expression du vin d'origine' comme on aime dire chez moderato 0% 🍷 Evidemment il faut du temps, mais quand nous nous sommes rencontrés avec mon associé Fabien Marchand-Cassagne, c'est ce qui nous a titillé, comment faire des produits de qualité qui valorisent ce savoir-faire autrement ? Et puis il y avait autre chose qui nous animait: Pourquoi le sans alcool devrait être un choix par défaut ? Pourquoi ne pourrait-on pas un jour choisir sans complexe un vin ou un vin sans alcool pour le plaisir ? Permettre à chacun de choisir en s'asseyant à la même table ? Et vous me demanderez peut-être ce qu'en a pensé ma famille. Je me souviens des moues polies, encourageantes quand même, à l'issu des premiers tests. Et puis est arrivé notre Colombard de la Cuvée Révolutionnaire. Je l'ai fait goûté à mes proches et je me souviens notamment de la réaction de mon cousin Amaury Thomas (distillateur de son état) qui m'a regardé en me disant: 'mais comment vous faites un truc pareil???' et ce n'était pas une question rhétorique. A ce moment-là, je me suis dit qu'il y avait un chemin, et je me suis resservi un bon verre ! But something arised too for us: how to shift from a functional product to an enjoyable one ? How to make that choice between wine and non alc wine 'normal' so that everyone can sit at the same table ? And what about my family's reaction then you might ask? At first the initial trials triggered polite raised eyebrows (and yet support!), but then came our Colombard from La Cuvée Révolutionnaire. I remember having my cousine Amaury (master distiller) try it and looking back at me he said 'how do you truly makes this???'. I knew then we were onto something and I poured myself another glass !
