🌾 Happy to share another outcome of my PhD research published in the special issue- Pigmented Grains in the Journal of Food Measurement and Characterization Springer Nature. We developed nine ready-to-cook (RTC) formulations from two pigmented grains of Assam targeting ICDS nutritional categories for children, pregnant women, nursing mothers and pre-schoolers. This work highlights that: --> Combined formulations outperformed single-grain variants in sensory scores, antioxidant activity & mineral density. --> Finger millet boosted Ca, Mg, Fe & Zn; black rice elevated phenolics & anthocyanins. --> In vitro digestibility revealed enhanced TPC & TAC bio-accessibility in combined formulations. --> Potential applications in low-GI, high-fibre, gluten-free & anti-diabetic diets.
