This World Environment Day, ProxIMed focuses on one of the Mediterranean region’s key challenges: producing nutritious foods with lower environmental pressure while respecting local diets, cultures, and markets. 🌿 The project studies traditional, novel, and agro-industrial protein sources such as lentils, faba beans, chia seeds, microalgae, insects, and tomato by-products. These resources are processed with greener technologies, including microwave drying, supercritical fluid extraction, and cold plasma, to develop protein-enriched foods and feed products.
