Arla Unika produces "Den Hvide Dame" at Troldhede Dairy, where they have a proud tradition of blue cheese. In "The White Lady", they have tripled the milk's natural fat content of cream. It raises the cheese to 75+, which is a dairy technical term for the fat content of the dry matter. In the finished cheese, this means a fat content of almost 50%. The buttery cheese is balanced with the yeast culture Geotrichum, which forms a crisp, thin, white mold surface…etc. 2018 Ramey chardonnay, Rochioli Vineyard, Russian river to drink now through to 2029.
