The new EU-wide Listeria Regulation has been in force since 1 July 2026. ⚠️ The Regulation tightens the limit values for ready-to-eat (RTE) foods that may promote the growth of Listeria monocytogenes: Food manufacturers must demonstrate for ready-to-eat foods that Listeria monocytogenes cannot multiply, or can only multiply to a limited extent, throughout the entire shelf life. If this can be demonstrated to the satisfaction of the competent authority, the previous limit of ≤ 100 CFU/g remains in force. Suitable evidence includes, for example, challenge tests or shelf-life studies. If no suitable evidence is available, Listeria monocytogenes must not be detectable in 25 g of the food throughout its entire shelf life. What does this mean for manufacturers? ✅ Stricter product safety requirements ✅ Even more rigorous validation of shelf-life and safety concepts ✅ Greater focus on preventive solutions throughout the entire value chain Particularly challenging: Listeria can survive and grow even at fridge temperatures without altering the smell or appearance of the product.
