When SoDo donuts was ready to launch in a permanent location, complete with coffee service, owner Elle Cowen needed a solution that could support the rise in sales of their craft donuts and coffee without the cost, downtime, or limitations of a full café buildout. They worked closely with Monsam to design a custom coffee cart tailored to their workflow. The mobile setup accommodates commercial espresso equipment, includes an integrated cup rinser, and delivers hot and cold running water, all without requiring permanent plumbing infrastructure. The result is a compact, high-functioning café station that fits seamlessly into the SoDo experience while providing them with more flexibility to evolve. One month into the SoDo Café launch, the adaptable setup is already creating new opportunities for service, operations, and future expansion.
