Cinnamon grows in pockets across Sri Lanka — but few places let you witness its craft as closely as this working garden in Ahangama, on the south coast. Guests join skilled artisans to learn the centuries-old craft, which stems from cutting, how the bark is peeled, curled and graded by hand, the true mark of authentic Ceylon Cinnamon. The experience closes with a four-course cinnamon-infused lunch, finished with a signature cinnamon ice cream. True cinnamon — Cinnamomum verum — was first cultivated here, and Sri Lanka still supplies most of the world's true cinnamon today. Almost everything sold as "cinnamon" elsewhere is cassia, a different bark entirely. Wherever your journey takes you in Sri Lanka, seek out the real thing, taste it and take it home.
