"If we can see through the carapace of what we're confronted by, we have a chance of finding greatness."  Jeremy King recalls an afternoon when he and Chris Corbin found themselves in a Chinese restaurant after a meeting in Earl's Court. The Bang Bang Chicken they were served was, in his words, "flat and flaccid" - hardly an inspiration.  And yet, beneath the disappointing execution was an idea.  Reimagined in Le Caprice's kitchen in the 1980s, and revived at Arlington when we re-opened all these years later, it has become one of the dishes most closely associated with the restaurant. Over the years, it has found admirers ranging from punk musicians to the Princess of Wales and, despite occasional thoughts of retiring it, has never left the menu.  Some signatures are never retired.
