Recovering a side stream is one thing. Processing it into a stable and functional ingredient is often where the complexity begins. Variations in moisture content, fibre structure, fat level and particle size can impact everything from processing efficiency to final product performance. That's why the success of an upcycled ingredient depends not only on its nutritional value, but also on its processability.
