July. We ease off, slightly. Only slightly. Because in our profession, a real pause rarely exists. Weddings continue through the weekends. Teams keep going on the ground. And in the office, we are still very much at work. Just differently. July is the time we allow ourselves to work on what the busy season never leaves room for. The deeper projects. The ideas set aside. The things we want to do better, or differently, come September. It is also what defines a strong team: knowing how to move between the intensity of the field and the distance needed to build what comes next. After a week at 40 degrees and our heaviest June on record, this change of pace is well deserved. For our teams, most of all. So we breathe, we build and we prepare for an autumn season that is already shaping up to be a busy one. The Great Catering Journal — Issue #26
