The Woman Who Made Fresh Food Travel: Food used to be local by necessity. It couldn't always travel. Meat and produce rarely survived journeys. Dr. Mary Engle Pennington was part of the change that made national food distribution possible. Working as a chemist and food safety expert in the early 1900s at the U.S. Department of Agriculture, she helped design the systems that allowed refrigerated transport and safe cold storage for perishable foods. Creating conditions that permit us to enjoy exotic produce today. Rather than coming up with a single product, her work enabled fresh food to move at national scale. She also led early standards for food handling that shaped modern safety regulation across the industry. At GWF, we’re reminded that growing food is only part of the story, getting it to people matters just as much.
