Agroindustrial sustainability in Latin America has become strategically important in recent decades, driven by the urgent need to balance productive growth with environmental conservation and social justice. This article examines the most significant advances in technological innovation applied to the region's agroindustrial sector, as well as the structural challenges that still hinder their widespread implementation. Four major thematic areas are identified and explored: agricultural digitalization, sustainable innovations with positive environmental impacts, knowledge management through digital platforms, and social inclusion through educational and technological transfer processes. The analysis highlights opportunities offered by tools such as artificial intelligence, blockchain, vertical farming, traceability systems, and training platforms to transform the Latin American agroindustrial model. It also emphasizes the role of public policies that ensure territorial equity, fair access to technology, and the construction of a resilient and sustainable agroindustry over time.
