We showed up late. Four of us, at a restaurant bar in Yvoire, wanting nothing more than ice cream and an embarrassing amount of San Pellegrino. The waiter didn't take the order. He presented the cocktail of the day. Then the gin and tonic — a small Provençal producer, gin infused with oysters (!). Deeply iodized. He described it the way people talk about things they genuinely love. We weren't looking to be convinced. We were convinced anyway. We got the ice cream. We got the San Pellegrino. We also got two rounds of things we hadn't planned on ordering — and left having learned something we didn't expect to learn (and a new taste). That waiter didn't upsell us.
