My journey of food processing started by reading this book "Ultra-Processed People -- Why Do We All Eat Stuff That Isn't Food ... and Why Can't We Stop?". We started by asking whether there are nutritional correlates of ultra-processed food. Led by Nalin Arora, an exceptionally bright undergraduate research intern in the Complex Systems Laboratory, today we have a manuscript carved out of our intensive studies on building "Machine learning and natural language processing models to predict the extent of food processing".
