Meet Dandi Mitiku, a 2024-2025 Good Food Fellow who pursued an MSc in Food Science and Nutrition at Addis Ababa Science and Technology University in Addis Ababa, Ethiopia. Dandi’s research focused on Portulaca quadrifida, also known as Kimma, an underutilized Indigenous plant with potential nutritional and health benefits. Her project evaluated its nutritional composition, natural compounds that can affect nutrient absorption, and antioxidant activity to better understand its role in improving diets and supporting more sustainable food systems. By combining food science with local knowledge, Dandi’s work helps show why underutilized foods deserve closer study. It also reflects the purpose of the Good Food Fellows Program: supporting early-career researchers as they generate practical, evidence-informed insights for human and planetary health. Dandi’s training was supported by the Ethiopian Public Health Institute (EPHI), one of the six PTFI Centers of Excellence.
