One ingredient. Two women. A story of sustainable gastronomy. In Sermoneta, near Rome, Michelin Guide chef and FAO Champion Cristina Bowerman works with local producer angela_concu_anarchetipo through Adopt a Farmer — an initiative connecting chefs with farmers and producers around specific local ingredients. For Angela, that ingredient is the Trombolotto: a local citrus used to create a fragrant sauce with olives and herbs, bringing the flavours and traditions of the territory to the plate. For Cristina, knowing the people behind each ingredient is part of cooking with purpose. Their collaboration shows how chefs and producers can work together to protect local ingredients, safeguard biodiversity, support livelihoods and keep food traditions alive.
