La Credenza Ltd meet La Casearia Carpenedo Casearia Carpenedo was created in early 1900’s by Ernesto Carpenedo, who was a "casoin" (a dialect for cheesemonger) in the village of Preganziol, from the Veneto region, in Italy. Ernesto’s son, Antonio, joined his father in 1961 and started experimenting cheese making with the acquisition of a small dairy in Rovare. In 1976, Caseria Carpenedo created an underground cellar with a capacity of 30.000 cheeses, when a farmer ask him two wheels of cheese to put under the marc. A tradition he inherited from his parents during the war, when they hided the cheeses from the raids of the german soldiers. Intrigued Antonio repeated the experiment giving life to a new and exquisite family of cheese, called Drunken Cheeses. In the 1990's, they opened the actual Carpedano factory in Camalo di Povegliano. Nowaday Casearia Carpenedo is still own by the Carpenedo family, Ernesto and Alessandro Carpenado are now leading the company with as much passion than their ancestor. They have over thirty years of experience in the dairy-cheese sector and today devote themselves to producing innovative cheese like "L'Ubriaco"®, "Brillo di Treviso"®, "Sottocenere Aromatizzato al Tartufo", "Speziato" and the so called "Barricati" cheese. #london #londonrestaurants
