Consumers should not have to choose between the foods they love and a better climate outcome. That is what makes the “cheese paradox” so important: food-system emissions do not fall fast enough if one high-impact category is simply replaced by another. And guess what: Humans can't get enough of cheese. We get that! 🧀 Cheese is one of the toughest categories to reinvent well. That's why it is exactly where novel technologies can make a real difference with system-level impact. We were glad to see this reflected in Table.Today's recent piece on the “cheese paradox,” which highlights our work as the technology-driven way to address the issue.
