Some restaurants open with a concept. Others open with a lifetime of experience behind them. For the latest edition of our Dining at… series, we visited Restaurant Azurite in Delft and sat down with Mario Ridder for Episode 4 of Season 2 of Chefs & Cellars. After more than three decades at the highest level of Dutch gastronomy, Mario has created something deeply personal. Azurite feels less like a new restaurant and more like the place where the different chapters of his career come together. From Parkheuvel and De Zwethheul to Joelia and now Delft, the restaurant reflects a lifetime dedicated to hospitality, craftsmanship and continuous refinement. During our conversation, Mario shared a remark that stayed with us throughout the visit: “Everything I lost in the last ten years came back together again.” It is a sentiment that helps explain the atmosphere of Azurite. Every aspect of the experience feels intentional, from the spacious dining room and carefully curated guest journey to one of the most impressive wine collections in Dutch gastronomy. Several weeks after recording the podcast, we returned to experience the restaurant ourselves. Highlights included De Steur van Hering, Du Modeste au Noble, Hollands Trots, and Lozère Viungo, accompanied by a thoughtful wine pairing featuring Domaine Bernadeau, Domaine Albert Grivault, Château Palmer, Château Lynch-Bages and a beautifully mature Thanisch Riesling Auslese. Wine, unsurprisingly, remained at the centre of many conversations.
