Next week, our team is heading to Compass Group Danmark They're representing Compass Group Local Market at the European Culinary Cup — the annual contest that brings together chefs from Compass countries all over the continent. Their spot was earned back in November at our Battle of the Chefs, where four teams went head-to-head and theirs came out on top. In the months since, they've put in serious work — testing, tasting, refining three dishes until every element earned its place on the plate. Not alone: they had the privilege of working alongside Filip Claeys (De Jonkman, two Michelin stars), who challenged their thinking, pushed their technique, and helped sharpen every dish.
