Our recent SOSA Ingredients Tasting Lunch was a focused, technique‑driven session led by Silma Ayres Teodoro alongside our Executive Chef Russell Bateman, designed to showcase how modernist techniques translate into real kitchen applications. Guests experienced a warehouse tour and a four‑course menu with canapés, each dish highlighting key foundations used in professional kitchens: Aeration, gelling, thickening, emulsion and stabilisation. From stable foams to precise textures and balanced emulsions, every element demonstrated how these techniques elevate both flavour and consistency in service.
