CEOs: Fascinating piece in today’s The Observer UK Magazine about Omós - meaning respect in Irish - a guesthouse and restaurant run by ex-Noma chef Cúán Greene outside Abbeyleix in Ireland’s Midlands. I know the area well. My first disco dance at 16, when I was at boarding school in nearby Ballyfin, was at the girls’ convent school in Abbeyleix. But I digress, wistfully. The sentence that caught my eye and might interest you is this: “…the environment we’re trying to nurture…It’s just about making people - staff, guests, everyone - feel looked after.” If he can achieve that purpose it will be an exceptional achievement in a world where making people feel looked after isn’t a priority, sadly.
