Wine & food pairing week with The Wine Lady! Part 2 Today let's speak about some pairing for meat lovers! 1/ Here is the Christmas capon (big turkey) stuffed with delicate meat and accompanied with chestnuts, green beans and yes homemade fries ! To pair with: red wine, medium body as the meat is not very strong but with intense flavors of black fruits, leather and slightly of grilled coffee beans with this incredible Patrimonio 2012, Cuvée des gouverneurs Indeed this wine is already 7 years old and coming from one of my favorite wine maker ORENGA DE GAFFORY HENRI MICHEL in Corsica island (south of France , close to Italy ) . 2/ Another one with the big beef rib just cooked in oven with herbs, garlic and black pepper and sea salt flower with eggplant! To pair with: red wine, French, Bordeaux “Margaux category, 2007 vintage from CHATEAU D'ARSAC Made with 2/3 Cabernet Sauvignon grape and 1/3 Merlot grape The wine has strong liquorice aroma , black fruits and vanilla notes great to balance the strength of the meat and bring some fruitiness to compliment the eggplant.
