‘So what's the latest in fungi ?’... one of my friends just asked my over the summer ... and the answer is that mycology (Fungal-geekyness) is blooming is many different areas (even movies ...) and it is so exciting .... One of the things I'm currently engaged is ZEST: ZEST is an Circular Bio-based Europe Joint Undertaking (CBE JU) funded project on Fungi Fermentation Supported by Digital Modeling that I'm very proud to be coordinating. My wonderful partners in the ZEST project has made this cool video explaining our project. The project is combining my passion for fungi with the challenges of scaling and industrializing processes and products efficiently....
