An espresso a day… keeps us going! Espresso is far more than just coffee. It’s a fascinating soft matter system hiding a whole nano-universe. I am happy to share that our coffee research at the University of Fribourg, Department of Chemistry and Food Research and Innovation Center, in collaboration with the ZHAW Coffee Excellence Center, is featured in the 2025 Annual Report of the University of Fribourg. Using a combination of advanced imaging, scattering, and rheological techniques, we’re exploring how complex biomolecules in the brew self-assemble into architectures that shape the texture, stability, and sensory experience of coffee.
