Overseeing military catering operations, I played a pivotal role in maintaining the highest standards of Food Safety compliance in collaboration with our industry partner, ESS. Responsible for the end-to-end process, I effectively managed a diverse team of 22 front and back-of-house staff. My leadership and managerial acumen ensured seamless catering services while providing constructive feedback for continuous improvement. Responsible for the project management and logistics coordination of medium to large scale catering deployments across the globe. Ensuring that all forms of associated transport, alongside our HGV fleet line were ready to move and suitable for all tasking's. Networking with other specialists across the UK and Internationally to correlate team cohesion including, Food suppliers, engineering contractors, H&S and movement specialists, to ensure equipment, fuel and rations were in place. Acted as the first line safety officer under Safety, Hazardous & Environmental Protection. Ensuring that policy and legislation were adhered too, and all due diligence was correctly archived for yearly audit inspections. Liaised with site executives, rewriting safety operating procedures, to create safer and more efficient working practises. Management of inventory categorised against Operational priority, correctly receipted and dispatched in deployment order. Which included deployed catering equipment of over 300 lines and a value of £1.6m.
As a Chef operator, duties included production of safe food handling. Completion of all due diligence paperwork, stock management and rotation of goods. Deployment across the UK and overseas to remote radar sites, also including supporting logistics management teams around the globe.
