About

I’m Ryan, CEO and co-founder of Attendant Coffee Roasters. I’ve spent the past decade building Attendant from a single Fitzrovia café into a multi-site, vertically integrated coffee business operating across London. My background is grounded in real operating work: negotiating leases, rebuilding underperforming sites, raising £1.7M+ across equity and debt, designing financial and operational systems, strengthening margins, and building teams capable of delivering consistent performance across multiple locations. I understand the mechanics of scale because I’ve had to solve them firsthand. My focus now is preparing Attendant for its next stage of growth with a more disciplined operating model: tighter unit economics, stronger management capability, a more resilient supply chain, and an elevated customer experience that stands out in one of the most saturated markets in the UK. Core experience: • Multi-site growth and new-site development • Fundraising (£1.7M+ equity, debt, bank finance) • Supply-chain engineering and margin improvement • Financial control, reporting, and operational systems • Team development and customer-experience frameworks • Complex refurbishments and rapid project delivery I write openly about the realities of hospitality because operators and investors deserve more honest insight into what scaling actually requires. If you’re building, scaling, or investing in hospitality, I’m always open to connecting with people who think deeply about the craft and the numbers behind it.

Attendant Coffee Roasters is a London hospitality and Specialty coffee platform built around product quality, operational discipline, and a focused expansion strategy. Founded in 2013 with a single Fitzrovia site, the brand has grown into a multisite operation with a vertically integrated model covering sourcing, product development, roasting partnerships, retail execution, and a streamlined food offer. Our six central London locations serve commuters, residents, creatives, and office workers. Attendant operates in the premium-casual segment: high quality, consistent, accessible, and designed for repeat behaviour. This positioning provides defensibility in a saturated market and strong performance potential in dense urban environments. Our operating philosophy is simple: a hospitality brand scales only when its product, systems, and culture are built for replication. We work with roasting partners to defined specifications, maintaining quality without the fixed overhead of in-house production. Internally, we run a structured operating model covering training, service standards, financial controls, and daily rhythms to ensure consistent execution across all sites. Store design prioritises speed, efficient labour use, and strong customer flow. The menu is engineered around seasonality, margin integrity, and throughput efficiency, giving the business a commercially resilient base for scale. Growth has been fully founder-led, supported by more than £1.7M across equity, bank finance, and debt. Attendant has evolved from a single café into a scalable platform with defined fundamentals and a roadmap for controlled multisite expansion. Our focus now is strengthening the platform, refining unit economics, and preparing the brand for its next stage of growth. Attendant has received international recognition, including features in BBC, The New York Times, Time Out, France2, Canale 5, and Visit London. www.attendantcoffee.com Instagram: attendantcoffee
