Based on prior success, recruited to work directly with the owner to plan and direct the opening of a new concept cafe/restaurant in a highly competitive market. Managed all pre-opening activities (e.g.,vendor relations, purchasing, equipment, operations, staff recruitment, training) and an aggressive branding and marketing plan to achieve revenue, profitability, and quality goals. Led contract negotiations, logistics, and all customer service functions. Handled all menu development and costing. Full P&L responsibility.

Responsibilities include, recruitment, training, vendor relationships , SOP creation, Aloha management, Estratex , support to GM and exec, overseeing FOH team of 60+ ,4 direct report managers, all day to day management of 400 cover restaurant, with separate 100 cover, 3 roomed Private Dining floor.
