I am a chef with over seven years experience in a variety of dining establishments. I have experience working in fast paced, scratch kitchens with an emphasis on local seasonal food. I enjoy pastry work and have successfully produced afternoon teas at all the establishments I have worked for. I have recently been employed as a pastry chef in an historic afternoon tea venue in Liverpool.
R and D role producing food samples for clients. Conducting daily testing on previous days samples for pH, viscosity, water activity and sugar content. Keeping sample records on Excel. Managing stock, using SAP interface to keep records. Organising sample deliveries with APC and TNT.
Working as a pastry chef in charge of afternoon teas for 200-300 a week in an architecturally significant building on Liverpools waterfront. Also making wedding and function desserts and making all the cakes for the LEAF tea rooms in the absence of the pastry head chef.
