    -In the project titled "RAVOC – Rapid Quality Assessment of Hazelnuts and Dried Fruits by Volatolomics", led by Dr. Aytunga Arık Kibar, we conducted research on a volatolomics-based approach for the rapid and reliable quality evaluation of nuts and dried fruits. -Be awarded a scholarship for 6 months as part of this project. -The study focused on the use of ergosterol, the primary sterol in mold cell membranes, as a specific biomarker for detecting mold contamination in food and agricultural products. Analytical techniques such as HS-GC-MS (Headspace-Gas Chromatography–Mass Spectrometry) and HPLC (High-Performance Liquid Chromatography) were employed to assess aroma profiles, quality parameters, and microbial quality through ergosterol quantification. -Conducted comparative protein extraction studies from lyophilized potato peels, utilizing Enzyme-Assisted Extraction (EAE), Ultrasound-Assisted Extraction (UAE), and a combined EAE-UAE method. -Processed the resultant supernatant through centrifugation and subsequent freezing prior to final analysis. -Performed quantitative protein analysis on the obtained isolates using the Kjeldahl method to determine protein content. -Prepared data-driven reports, analyzing results and assisting in hypothesis testing for improved food safety evaluations. -Participated in the PROTWIN Summer School hosted by the TÜBİTAK MAM Food Institute, an EU supported program focusing on scientific and technological excellence in plant protein research.
