I am External Examiner for the MSc Applied Human Nutrition at Oxford Brookes University.
As Programme Lead for BSc (Hons) Nutrition, Exercise and Health, I oversee curriculum design, accreditation compliance and programme quality, ensuring our AfN‑accredited degree remains sector‑leading. I work across Schools to streamline delivery, enhance student attainment and maintain high academic standards through evidence‑led curriculum development. My research focuses on metabolic and maternal health, leading an independent research group, supervising PhD students and contributing to national collaborations. Through external engagement, I shape national standards as an AfN Accreditation Committee Member, Degree Accreditation Assessor and External Examiner. I also collaborate with industry partners on commercial research and contribute to public‑facing science communication through media, outreach and advisory roles.
In my role, I split my time equally between teaching and research. I designed and delivered lectures, workshops, seminars and laboratory practicals across modules on the BSc (Hons) Nutrition, Exercise and Health, BSc (Hons) Dietetics and MSc Human Nutrition programmes. I supervised undergraduate dissertation projects, provided pastoral support as a personal tutor and contributed to assessment across the School of Biomedical and Healthcare Sciences. I also served as the academic co‑ordinator for the Peer Assisted Learning Scheme (PALS). The research element of my position was driven by my PhD in maternal nutrition, which I completed during this period. I focused on developing publications from my doctoral work and exploring opportunities for future research.
Alongside my PhD studies I founded 'Libra Wellbeing' and worked as a freelance nutritionist. I advised clients on a wealth of nutrition issues including weight loss, weight gain, sports nutrition, healthy eating, special diets (e.g. vegetarian, vegan) and pre-conception.
I delivered nutrition content on various undergraduate modules at the University of St Mark and St John. This involved planning, designing and delivering content, as well as marking associated assignments.
