•Liwa Minor operates 31 locations in 3 MENA markets with an annual turnover of AED 108 million. •Responsible for setting the annual operating strategy for Liwa Minor Food and Beverages. •Design and implement operating efficiencies that delivered 3% savings in operating expenses and 4.5% in cost of goods sold. •Managed Aggregator relationships and achieved 3 percentage point reductions in fees charged. •Grew delivery sales by 4 percentage points •Full menu engineering responsibility including menu segmentation and engineering, new product development, costing analysis and pricing strategies. •Supplier management to include HACCP management and/or BRC certification or equivalent, product quality, pricing suitability and continuity of supply, negotiation and approval of annual agreements. •Developed and implemented customer service improvement strategy, resulting in improved customer satisfaction from 72% to 92%. •Introduced team e-learning platform - Clubhouse. •Digitised manual processes including loyalty program, HR systems and operational processes. •Opened 10 new locations in last 10 months. •Introduced balanced scorecard to measure and evaluate operations success. •Preparation of quarterly review reports for submission to LMFB Board. •Responsible for preparing weekly business performance reports for LMFB executive team with strategies for improvement where required and best practices that are repeatable. •Agree and sign off on all new restaurant designs and operating processes. •Review of all legal contracts for business implication check before being submitted to legal team for final ratification.
Gourmet Gulf is a GCC based owner and operator of 7 brands including Azkadenya; California Pizza Kitchen; Dalloyau; Hummingbird Bakery; Panda Express; Texas de Brazil; Yo! Sushi in UAE and KSA. • Grew group outlet numbers by 66%, turnover by 75% and profitability by 131%. • Led the delivery department including call centre, fleet and drivers. • Managed relationship with all delivery aggregators. • Dalloyau – designed new concept to capitalise on market requirements, complete menu redesign and continuous innovation of offering. • Hummingbird – created new brand image for KSA that was adopted by brand owners as the new brand image direction. • Yo Sushi – redesigned and introduced new menu to match new brand direction of “Japanese street food” • Redesigned central kitchen to improve production efficiency and product quality. • Cost management through efficiency initiatives across all brands that resulted in AED7mn savings in 2016.
