• Managing the projects (New Products) from recipe development to product listings, and production line scaleups. • Managed the establishment of the Pilot Commercial Plant, including layout designing, machine procurements, and establishment. • Have worked on Extrusion technology, Modified Atmosphere Packaging, and Retort technology/thermal processing technology. • Optimizing of the recipes for new product to be developed. • Troubleshooting the problems faced during new product development and solving them with proper corrective actions. • Ensuring compliance of product as well as facility with FSSAI. • Preparing documents for the large-scale productions on the basis of the optimized products. • Establishing the process parameters and quality control parameters for food for shelf life, flavor, texture, rheology, nutritional value, convenience, and composition (physical, chemical, microbiological) for the large scale production. • Shelf stability study and validation data & reports, new products documents etc. in order to comply with regulatory & statutory requirements. • Creating and implementing SOPs related to quality, production, process troubleshooting at manufacturing pilot plant. • Establishing the R & D kitchen and quality assurance laboratory in the facility and recruiting manpower. • Creating and implementing SOPs related to quality, production, process troubleshooting at manufacturing pilot plant.
