Teaching the Level 2 City and Guilds Technical Certificate in Floristry
My role here was Restaurant & Social Media Manager, with additional responsibilities in managing room bookings and book keeping. This was a new venture for the owners who had recently finished refurbishing the Inn which has been serving locals since 1776 on the small island of Seil, Scotland. This was a hugely challenging and rewarding position due to the particular nature of running a business in such a remote environment. The job required constant attention to detail, exacting standards of service, a great ability to work under pressure with precise time constraints. Alongside this I was responsible for establishing the foundations of the restaurant and the style of service we wished to provide within the months of the tourist season. I also had the opportunity to take ownership of the book keeping for the business, which gave me a keen understanding of how to manage budgets and maximise income for the business. In this role I felt greatly rewarded for my work as we were able to clearly show we had made good profits every month and felt great seeing the growing appreciation for our work within the local community and the wider world as we received a glowing review in the Times newspaper which I am immensely proud of.
Som Saa is a fast paced Thai restaurant in East London where the owners have spent 5 years building a stand out brand built on quality and authenticity. I started my time at Som Saa as a server, learning their style of service and partaking in extensive wine training. However I quickly moved to the role of assistant manager. I was involved in hosting and managing table bookings using ResDiary, as well as supervising services and staff training. I also joined the weekly management meetings, receiving an insight into communications between different departments and taking minutes. My time at Som Saa gave me an opportunity to refine my communication skills, make quick decisions and operate proactively in a team environment.
I was working as a Contracts Manager for Private members clubs such Annabel’s on Berkley Square, Mark’s Club and Alfred’s. Alongside this I worked on the floral installations at The Rosewood, Holborn and Claridges, Mayfair. In this role I organised and ordered the weekly changing flower displays for our clients. I would create, deliver and maintain these displays throughout the week. In addition to this I created bespoke bouquets for our shop and assisted on large events for high end clients. I learnt a lot about how to organise my time, how to communicate well with high end clients, budgeting, refining my personal skills in floral design and more about fashionable styles.
