My current position is as a cooking class instructor for kids with Real Food 4 Kids. Along with sharing the joys of cooking, we also share the importance of fresh, nutritional foods and safety in the kitchen. Prior to this, I completed an internship with Easterseals Iowa in their Rural Solutions and Assistive Technology Departments. I conducted outreach so that more rural residents and farm families with disabilities are able to access services such as home/agricultural work site modifications, peer support, and medical equipment loans. I have professional experience in the areas of food science and food safety, horticulture, sustainable agriculture, and journalism. I am currently studying Nutritional Sciences at Iowa State University on a pre-health/research track, with special interests in food security/dignity. I also completed an internship as an Undergraduate Research Assistant through Iowa State focused on two projects. I wrote, edited, and recorded a series of four lectures concerning legislation HF 2431, which describes regulations and licensing for home-based kitchen operators in Iowa. I also assisted in editing, develooping, and administering Iowa State Extension and Outreach's in-person short course concerning shelf life and shelf stability.
