The chair for Nutrition and Immunology, headed by Prof. Haller, Research activities of the chair are focused on the basic understanding of mechanisms for the role of nutrition and the gut microbiome in the initiation, prevention and therapy of chronic inflammatory diseases covering the following themes: Microbiome and gut health, Inflammation and immune function, Bioactivity of food and microbes. Research project: Biofunctionality of sourdough metabolites in healthy and inflamed gastrointestinal tract. (Sponsor: Hofpfisterei GmbH). The main focus of the research is to investigate the potential of sourdough lactic acid bacteria and their metabolites to modulate intestinal inflammation through interaction with intestinal microbiota and gut lining.
